{sorry i didn't take any pictures of my own...and this one looks much prettier than mine! haha}

So last night I decided to try out this recipe: Lemon Herb Zucchini Fettuccine [click the link to get the recipe and make it yourself!] from "Our Best Bites". It was DELISH!!! I will definately be having the leftovers for lunch today! :o)

I went on the Livestrong today and put the recipe in the recipe builder. I found out there was about 589 calories per serving, which was a 1/4 of the batch. Not too bad! and if you added more cheese it would be a little more, but still not a ton! Then just add a few slices of french bread to menu and you have yourself a nice, healthy dinner! {or so i think}

A meal idea doesn't come right to my mind but I have an easy idea for a healthier dessert. We have been cutting out sugar around here, for a little while, not completely but we have put a good effort into it. ANYWAY, I've been trying to find ways to do dessert a little healthier. here are 2 ideas we have done, they are simple and we have liked them.

Half a grapefruit and cut into sections. Put on a little sugar or sugar substitute like Stevia or Splenda, add a few shakes of Cinnamon. place in a oven safe dish and bake for 2-3 minutes. (it was much better than I thought it would be)

Fruit dip (we've been doing it with strawberries)

get heavy whipping cream and whisk until light peaks form. Add 2 tsp vanilla and a few shakes of cinnamon (not too much of either since it will make the peaks fall) HAND whip it all together and use as a dip. Its light yet so very tasty! :)

That really does look SOOOO good, I will have to try it!

I was watching "The Biggest Loser" last night (and crying my eyes out, I love that show!) and they made a really yummy chili with ground turkey and lots of peppers. I haven't looked yet, but I am hoping the recipe is on their website because it looked WAY GOOD!!!

CAMILLA: How funny...i was just reading the biggest loser cookbook yesterday and it gave that grapefruit idea. i don't really love grapefruits, but i am going to give it a try!

actually i think i am going to start following the biggest loser "diet" and follow it for 12 weeks :o)

POLLY: i know...i love the biggest loser and often times cry! haha. but i thought that chili looked really good too! so i looked it up online, and i found a jennie-o turkey chili recipe that it could possibly be? (http://www.jennieo.com/recipes/recipe_detail.aspx?Id=1086) take a look and see what you think! :o)
